Istanbul roaster with a Hasköy workshop behind the Koç Museum.

The workshop sits on the street of the Red Minaret Mosque, where a 6kg Giesen W6A replaced the brand's first roaster, a 1kg Toper. It also hosts tastings and seminars and handles wholesale.

İbrahim Burak Göğüş and Mirhan Köroğlu Göğüş founded the business in 2014, after careers in television and online products and in climate policy with the European Parliament and CDP. The espresso blends are called Evolution, Genesis and Mutation, and single origins have included Jamaica Blue Mountain alongside lots from Ethiopia, Kenya and Colombia. Cafés run in Karaköy and in Kanyon.

At this shop

On a vine-strung pedestrian lane in Karaköy under a run of red-and-white awnings, glazed folding doors open onto the pavement out front. Inside, the narrow room runs back to a small mezzanine reached by a ladder, and copper dispensers line the stone wall behind the counter, each labelled by hand with the bean inside: Limu, Yirgacheffe, Antigua, Huila.
