Its sourcing rests on direct relationships with farmers and on knowing which farm grew each coffee, how it was processed, and who picked it. Beans go out wholesale and by monthly subscription, as espresso, filter, cold brew, and green coffee.
A weathered concrete building on Tatar Beyi Sokak, a narrow cobbled pedestrian street with graffitied facades opposite, carries one grey awning printed OLD JAVA twice over two glass-and-timber doors, with ghost-painted OLD COFFEE lettering above and bistro tables on the pavement on both sides. Inside, the left door opens onto a wood-slat counter with a two-group machine, and the right leads through the seating area to a dark-walled back room, where green coffee sacks are stacked in a nook beneath an OLD JAVA COFFEE ROASTERS sign.
